Impact Report 3 Feeding a community: How one student is turning food waste into donated meals In spring 2023, Penn State senior Adeline Peat co-founded the university's chapter of the Food Recovery Network (FRN) to combat food waste and food insecurity. Motivated by witnessing unserved meals being discarded in dining halls while students faced hunger, Peat, along with fellow students, established the organization to recover surplus food. Since its inception, the FRN has redistributed over 6,700 meals from four campus dining halls to local shelters and food pantries, including Abba Java Coffeehouse, Community Café at St. Andrew’s Episcopal Church, Out of the Cold: Centre County, and The Lion’s Pantry. This initiative not only addresses hunger but also mitigates environmental impact by preventing more than 23,000 pounds of greenhouse gas emissions from decomposing food waste. The FRN at Penn State operates with the support of 40 student volunteers who conduct weekly food recoveries during academic semesters and have expanded operations into the summer. Beyond food redistribution, the organization fosters community engagement through events like zero-waste cooking nights, aiming to destigmatize hunger and promote sustainability. Peat's commitment to integrating environmental and human health extends to her academic pursuits in nutritional sciences and involvement in global health initiatives, such as her participation in MEDLIFE in Peru and research with the POLARIS project on climate impacts in Arctic communities. Her holistic approach underscores the potential for student- led initiatives to drive meaningful change in addressing both local and global challenges.
